Flat fish are at their best at this time of year. Cornish Sole (Megrim), Plaice, Lemon Sole and Dover Sole provide a range of flavours and work well as whole fish or as fillets. Cornish Sole work best if you are on a budget but Lemon Sole are probably the best value for money through July.
White fish such as Cod and Hake are in good supply and prices are stable, always prove popular on our customers menus.
Farmed Fish will always be the most consistent for supply and pricing so Sea Bass and Sea Bream would be our recommendation in July.

Ingredients

  • SOLE GRENOBLOISE
  • 200g Unsalted Butter
  • 10g Dijon Mustard
  • 15g Flat Leaf Parsley
  • ½ Lemon (Juice Only)
  • 1 Garlic Clove Minced.
  • 2 Sprigs Thyme
  • 2 Tspns Ground Almonds
  • 1 Pinch Cayenne Pepper
  • 20g Baby Capers
  • 50ml Chicken or Fish Stock

Method

  • Soften Butter.
  • Finely Chop all Ingredients.
  • Slowly whisk in the Cold Stock to the butter and add all other ingredients.
  • 4. Roll Tight in a cylinder shape in Cling film and Refrigerate for 24 hours.
  • Cooking Tips: When finishing Soles Cooking place under the grill for 1 minute with slices of Grenobloise Butter until browning.
